There is no extra cost to operating the booths in celeste quarry. I do pay a sales tax to the estate owner (for CQ I guess that is Ark PP)

I'm not on Ark, so I can't check.

    How it works exactly?

I put an item in my shop with 100 ped tt, sell it for 200 ped to someone, where this 2% tax jumps in?

It's 2.5%, same as anywhere else in the universe and the tax is on the MU amount.so if you sell 100TT for 200 ped you pay tax of (200-100)*2.5%. You only pay if it sells - unlike AH.
The other thing to keep in mind that if you set retail price at say 200, then the shop calculates the sales tax and adds that to the advertised price. If it sells you get your 100 ped profit and the estate owner gets his 2.5 ped.

HOw did you not get that from my response?: "The other thing to keep in mind that if you set retail price at say 200, then the shop calculates the sales tax and adds that to the advertised price."

Placing items in the Auction House may take up to six days to sell. so if I open up a shop it will be at no upfront cost, is that correct?

Is there a limit of how many goods a shop can have in stock?

Can same item be on the Auction block and on sale at the store at the same time?

Yes, except the purchase of the shop/booth/shopkeeper ofc

Yes, check the estate terminals to find that out. And there is a option to buy extra item points from the Planet Partner too

    No, one or the other
